Does my hair need moisture or protein?

First of all I am so sorry for all the questions I keep posting but finding the answer is doing my nut in.

I bleach bathed my hair about 4/5 times last year, I also toned it twice and then dyed it Alpine green and rose red. All was fine until recently.  When I wash my hair it becomes really dry, thick and crunchy and I can run mu fingers through it at all, this is all whilst wet.  If I didn't slap on some conditioner, I hate to think what it would be like.

I've done the hair stretching test, when wet it stretches the tiniest amount then snaps, whilst dry it just snaps without stretching at all. 

I have little bits of hair snapping off also.

My hair doesn't feel dry when dry but it is quite straw like and it is hard to run my fingers through it and is prone to knotting.

I've cut off about 3 inches of my hair at home already and I know my best bet is cutting it all off but I'd at least like to try something before doing this.

I have a theory that since the veggie semis are conditioning, the hair becomes drier as they fade. Therefore, it would unmask any damage from the bleach.
I find that my hair starts feeling slightly dry the more the color fades but since i only bleach my roots now, a good reconstructor and deep moisturising fixes my problem.
Try using joico reconstructor ( i only leave it 10 minutes as my hair hates protein) and them a good moisturising treatment.
The cold also dries my hair out. I have just had to cut 2 inches because the cold wind gave me bad split ends.
