Hey y'all! I'm starting this tread for us to share recipes, stories and general tips I guess π Everyone can post here, but no veg* hate π Please share your story here!
Okay, I'll start! I went vegetarian October 2013 and vegan in March 2014. As I started it was mostly for health reasons but now I'm all for animals rights π
My favourite meal is spinach pasta sauce, which is super easy and cheap!
Ingredients:
* 1 red onion
* ~0,5 kg frozen spinach
* Non dairy cream (I used oatly, but you can use alpro or something like that) also soy milk works well too.
* Salt & pepper
* Dill (LOTS)
* One cube of vegetable boullion/ stock
Cut and fry the onion, throw in the spinach, let simmer for a while and then pour in the cream and spices to taste π Serve with pasta (I like curly pasta). It's awesome!
Boy I do love a nice curry sauce with cashew in it, with nice rice and chick peas !

I'm not vegetarian, definitely not vegan, partly because I'm such a fussy eater I couldn't get enough protein on a vegan or vegetarian diet! But, I do love a lot of vegetarian food and always have done, so I'll be watching the thread π I hope more have some contributions for you and if I think of anything I'll add too π
I used to be a vegetarian, now I eat meat or fish maybe once or twice a week. Always eco/bio (don't know what it's called in English), where amongst other things it's not allowed to give antibiotics as a precaution, the animals have outdoor space to walk around and in some species the animal isn't a breed that grows so fast it can't support itself after a few weeks (like chickens). With fish it's harder to get eco/bio, it's usually just enviromentally better and actual eco/bio fish where animal welfare is taken in account is harder to find.
One of my favourite veggie dishes is a lukewarm pasta salad with witloof/chicory.
Boil some pasta (I usually use macaroni).
Slice some witloof/chicory, taking out the hard center and whatnot.
Mix lots of yoghurt, a spoon of mayo and lots of finely cut flatleaf parsley together as a dressing.
Toss the raw witloof/chicory and macaroni into the dressing and voila!
I rarely use salt in my dishes, but I always think it's easy to add afterwards for the people who do want salt. And this dish can also be done with radicchio, but since that's not always available I use witloof/chicory instead. Not sure if this can be done vegan, since I don't know about substitutes for diary products.
I love curries too, especially green curries with added lime juice at the end. I ate a curry this evening with cauliflower and green peas with a hard boiled egg on top.
Pastabakes are good to make a veggie version of too, don't think it can be done vegan though. You need to make a bechamel sort of sauce with butter, flour, milk and cheese. Mix pasta and (pre boiled/baked) veggies with the sauce and into the oven and yum.
I can live without meat, I can NOT live without pasta. π
I went through a serious veggie phase, but as with JanineB I couldn't get enough protein or iron on it, even with the use of supplements and my doctors advised me to at least eat white meats.
But enough about that, here's one of my old favourite veggie recipes for a spicy pasta hotpot and stuffed peppers π
Spicy Pasta Hotpot (serves 4)
You will need:
1 cup of pasta
A splash of virgin olive oil
1 carton of chopped tomatoes OR one tin of peeled plum tomatoes
1 diced onion
3 sliced peppers
1/4 cup of red lentils
1 pack of Quorn chicken substitute
1 tablespoon of Worcester Sauce
1 teaspoon of mixed herbs
A pinch or two of cajun Pepper
Step 1
Boil water and add in the olive oil and pasta, cook until al dente, and in a separate pan, fry off the Quorn pieces
Step 2
Add in the tomatoes, onions and lentils to the chicken substitute and stir stir stir!
Step 3
Add in the peppers, Worcester sauce and herbs
Step 4
Add in the pasta, leave to simmer for 2-3 minutes, then add in your cajun pepper & enjoy with either cheese or non-fat Greek yoghurt
Veggie Stuffed Peppers (serves 2)
You will need:
4 large peppers; any colour, it's your preference
1/4 cup of cous cous
3 tablespoons of toasted pine nuts
1/4 cup of dried tomatoes
1/4 cup of dried onions
2 tablespoons of shredded basil
1 tablespoon of cut chives
a little crumbled goats cheese for the tops
Step 1
Cut the tops off of your peppers and de-seed them, add boiling water to the cous cous in a bowl and fluff with a fork
Step 2
Add to the cous cous your tomatoes and onions, herbs and finally your pine nuts and mix well
Step 3
Stuff your peppers with as much or as little of the mixture as you desire
Step 4
Put on a baking tray and leave in the oven for 20 minutes at 200 degrees
Step 5
Serve with the crumbled goats cheese, and perhaps a little side salad for a nice lunch π

I am a vegetarian too π I can't eat dairy or eggs either(and don't eat any other animal by products), but I do eat quorn which has traces of egg I think so I'm not a fully fledged vegan. Became vegetarian about a year and a half ago (after being a vegan in my teens for about a year or two) primarily for health reasons too as I have several food issues. I'll try and post some recipes at some point π

How do you all feel about eating out in restaurants? Do they always have alternatives or do you feel like you're only causing them trouble? π In my little town there are hardly vegetarian options, so vegan options are even less! So I find that it's always a hassle for me to get junk food here (which maybe isn't so bad hehe).

Mine weren't vegan because I substituted normal milk for the plant milk in the recipe, and I also didn't check the dark chocolate to see if it was vegan or not.
