I've got two-ingredient recipe (with mix ins of your choice) for banana cookies, and they're totally guilt-free.

Here is the banana bread recipe. It's in US units and i'm not sure if i got conversions right but i added more coconut flour as my mix was too runny. I also added some stevia and chopped nuts.

Ingredients

    5 Eggs
    2 bananas
    ΒΌ cup coconut oil or butter (softened)
    Β½ cup coconut flour
    1 tsp baking soda
    1 tsp vanilla
    small amount of milk to thin (may not need)

Instructions

    Preheat oven to 400 degrees
    Put all ingredients in medium sized bowl
    Using strong whisk or immersion blender (recommend!), mix until smooth and well incorporated. If batter is too thick, add a little milk to thin, but don’t let it get runny at all.
    Put into greased muffin tins- i use a ΒΌ cup measure to make pretty even sized. Batter will be somewhat thick.
    Bake for 13-18 minutes until lightly browned and set in middle.

πŸ˜€ Sadly, I'm a fussy eater. It drives me nuts ('scuse the pun!) because it limits me so much. I try the things I don't like from time to time and I have gained a taste for things I didn't like before. But peanuts, never ever! Even the smell makes me so ill!

Not that i have seen. You can order it via tesco but not in store. I get mine from Holland and Barratt

I do understand the fussy eater thing.  Some of my adopted kiddos came to us with very limited palates.  It's been six years, and sadly, while they do eat more things than they used to... there are still many things they just don't fancy.  They do try.  But not many tastes have changed for them.  Is it just peanuts, or all nuts?  This fudge has walnuts, but I'm not sure if all nuts are 'peanuts' for Brits.  πŸ˜‰

The two ingredient banana cookie recipe:

Oatmeal (approx 2 sachets worth, or around 1 cup, approx 100 grams)
Banana (2-3)

Mash the bananas up in a bowl (the riper they are, the better!)  You can also blend them into a soft paste in a mixer, but I personally like the small banana chunks in the cookie.

Mix in the oatmeal and any mix-ins of your choice.  I find cinnamon works well, and my sister uses a dash of vanilla flavouring with a handful of chocolate chips, but you can put whatever spices/nuts/etc you want in.

Place in a pre-heated oven (350 Fahrenheit; 180 Celsius) on a greased sheet or parchment paper for approx 15 minutes.  They're done when they're a light golden brown on top.

They will be springy, not crispy.  Makes approx 10-15 1-2" cookies.

You can also substitute any sort of thick, pulpy fruit/veg for the banana, such as pumpkin or butternut squash (though you will definitely want cinnamon and nutmeg if you do either of those!).

Even if you eat the lot, the most you have eaten is a few bananas and some oatmeal (and maybe a handful of nuts or chocolate chips, depending).

IT's got me thinking about the fudge I made aaaages back. Oh my god that stuff was so delicious. Rich, but just SOOO delicious.

Thanks for the recipie Intemp. I have a small batch in the oven now, I tasted the mix beforehand and it was slightly too sweet for me so I added a pinch of salt and it were perfect. Hopefully they taste as fab once cooked, they're so guilt free too which is perfect, it's just akin to having a bowl of banana porridge really.
