Here is my recipe for Cream of Potato soup.  If anyone needs conversions to metric, please shout and I'll sit down with my chart and make the conversions.  πŸ™‚  This feeds my family of 9 generously with leftovers... so you could cut it in half and still eat well for a while.  πŸ˜‰

Cream of Potato & Cauliflower Soup

2 – 49.5 ounce cans Swanson chicken broth
3 – 16 ounce bags frozen cauliflower
2 pounds red skin potatoes, cut into Β½ inch cubes
1 jumbo yellow or sweet onion, chopped
4 stalks of celery, chopped
2 heaping tablespoons minced garlic (8-10 cloves)
1 stick of butter
Sea salt and fresh ground black pepper, to taste
(guesstimate: 3 tsp. seal salt, 1 tsp. pepper)
2 teaspoons ground coriander seed
ΒΎ cup unbleached flour
Β½ cup sour cream
2 cups heavy whipping cream
1 Β½ pounds of bacon, cooked and crumbled

Place the frozen cauliflower and one can of the chicken broth in an 8 quart Dutch oven.  Cover and turn heat to medium-high.  Proceed to next step.

In a large skillet, cook the chopped onion, celery and garlic in butter until wilted (approximately 10 minutes).  Add flour, sea salt and pepper.  Continue to cook and stir until the roux begins to brown.  Quickly stir the second can of broth into the roux.  Once it is combined, add the roux mixture to the pot of cauliflower along with the ground coriander seed.  Add the cubed red skin potatoes.  Stir to combine, cover and bring to a rolling boil.  Reduce heat to low and simmer, covered, for 2 hours.  Stir occasionally.

After 2 hours, add sour cream and heavy whipping cream to pot of hot soup.  Leave uncovered and temperature set to low.  Add cooked, crumbled bacon and allow to simmer an additional 10-15 minutes before serving.

EDIT: I forgot to add that I usually hit the hot pot of soup with my immersion (stick) blender with a few short bursts to chop up the cauliflower and potatoes prior to adding the sour cream and heavy cream.  It's not necessary, but it makes for a creamier soup!

Serve garnished with shredded sharp cheddar cheese, if desired.

Yield: 14-16 servings

This isn't what I ad for dinner tonight, but it's my fav recipe that I made up.

Pasta with vegetables and creamy tomato sauce

Ingredients:

2 cans of dices tomatoes (I like the fire roasted kind, but you can use whatever you want)
1 can of tomato paste (the smaller can)
2 bell peppers (you choice for what color)
2 jalapenos (if you like it spicy)
1 zucchini
1 cup frozen peas
4oz cream cheese
2 cups shredded cheese of your choice (I like pepperjack)
1 box of rotini noodles

Cook the noodles according to directions on the box. Meanwhile, cut up bell peppers, jalapenos, and zucchini. Fry in olive oil in a skillet over medium heat until soft. If they get done before your noodles, set the heat to low to keep them warm until you need them.

Strain your noodles when they are done. Put them back into the pot your cooked them in. Add the diced tomatoes and the tomato. Put back onto the stove on medium heat. Add 1 cup of cheese as well as all of the cream cheese. Add peas and sauteed vegetables. Put a lid on it and let it cook until all the cheese are melted, stirring occasionally. Once everything melted and mixed, it's done! Spoon into a bowel, top with remaining cheese and enjoy.

This makes a ton of food so you'll want to use your biggest pot, probably (unless you have some truly gargantuan pots). The leftovers are great hot OR cold, so if you can't zap them in the microwave the next day, it's okay cause it will still be delicious!

I am trying really hard to cut down on the amount of refined sugar I get in my diet whilst also increasing the amount of healthy oils I consume, but chocolate is a weakness of mine.  I was doing some searching and I found a recipe online for coconut oil fudge; it had just three ingredients (coconut oil, honey and cocoa powder).  It sounded okay, but rather blah to me.  I changed it up by adding the peanut butter, sea salt and chopped walnuts.  This is truly delicious so I thought I'd share.  πŸ™‚

I don't have the conversions handy from US customary units to metric, sorry about that!

Coconut Oil "Fudge"

1 cup virgin coconut oil; divided
1 cup cocoa powder
3/4 cup raw unprocessed honey
1/2 cup natural peanut butter
1 teaspoon kosher sea salt (optional)*
1/2 cup chopped walnuts (optional)

*I used Redmond Real Salt, the Kosher Crystals.  It's optional, but really makes it good like a salted dark chocolate truffle in you ask me.  YUM!

In a small sauce pan over very low heat, gently melt 1/2 cup coconut oil just until liquid.  Remove from heat and set aside.

In a blender, add the remaining 1/2 cup solid coconut oil, honey, natural peanut butter, cocoa powder and sea salt (if using).  Pour liquid coconut oil in, cover and pulse until thoroughly blended and smooth.  Do not over blend as it may separate.  Fold chopped walnuts in by hand and pour/scrape from blender container into a lined loaf pan (or similar lined pan).  Refrigerate for one hour; removed and cut into bite size pieces.  Store in air tight container in refrigerator.

You're most welcome!  I was so skeptical first that it would be any good... but it's really amazing and just the right amount of sweet.  My husband is going crazy over it... though I warned him that too much could have a laxative effect.  *giggle*

I'll be staying a million miles away from that unfortunately. I don't like coconut (don't even like the smell of the oil when I'm using it!) and I LOATHE peanuts, yuck yuck yuck lol Shame though, it looks lovely!

This looks (and sounds!) absolutely yummy, but sadly, I will also be staying away!  Although my reasons are that I'm trying to lose weight and avoid eating high fat foods, even if it is a good fat!  πŸ˜€

Ha ha meeshy... you must have an appetite like my daughter.  We have nicknamed her "hollow leg" as she is so tiny... but she can eat more food than her pappy most meals (especially pizza!).  It's really a wonder where she puts it... so we've determined she MUST have a hollow leg.  πŸ˜›

ohhh this looks so nice!!

I am doing low carb and I have been trying out some recipes with coconut flour and coconut oil. My favorites so far have been banana bread (soooo nice), glazed coconut muffins (tasty but i am going to modify a bit next time)

Let me know if you like sound of these and ill post the recipes

Oh, my.  Those look and sound delicous.

I've got two-ingredient recipe (with mix ins of your choice) for banana cookies, and they're totally guilt-free.
