My hair is currently a faded chocolate cherry. I'm really want to go back to strawberry blonde but would hate to bleach my hair. I did it once and swore never again. So far my research has suggested allowing it to mostly fade and apply a couple rounds of color remover before dying. Do you think this will do the trick?
Overall my hair is really healthy so I'm trying to avoid damaging it beyond repair

Ok, so your natural colour is darker than the colour you're aiming for? If that's the case, it might need a little further lightening after you've removed the colour. It's likely it'll just need a bleach bath though, which done correctly is very gentle.
so yes, you can try fading, but if it was a permanent dye that you used, it won't have a huge affect. So colour remover is most likely the way for you to go. You can do it up to three times. It can be drying though, so make sure to have a good deep conditioner one on hand. Make sure it's a remover and not a stripper. The strippers tend to be a lot more damaging.
